The carp pond industry in Franconia sports a tradition spanning more than 1000 years. Its beginnings go back to the time of Karl the Great.
It was especially through the influence of the convents that it already reached a peak in the middle ages. Back then, a carp was an important food item during the fasting time and, additionally, a welcome addition to the menus of aristrocats, the church and well-off citizens.
Carp was an expensive delicacy. 1 kg carp cost as much as 6 kg beef or 24 liters beer. Hence, a number of ponds was established and in many regions of Franconia, a passion for carp-farming sprang up.
Even back then, the centers of pond farming were the Aischgrund as well as Dinkelsbühl. Owing to early carp breeding works, own carp stems were generated. The “Aischgründer mirror carp“ and also the “Dinkelsbühler carp“ were soon known far beyond the borders of Europe.
